How to make mature cheddar cauliflower cheese recipe

A favourite dish of mine is mature cheddar cauliflower cheese. A great addition to a special vegetarian roast meal or a meal in its own right with crusty bread. Below is my wonderful girlfriends’ version of this great dish.

What you need

– a cauliflower
– good mature cheddar
– butter *
– plain flour *
– milk *
– mustard *

Step 1 – Break up the cauliflower into large chunks and spread out into a large microwave and oven friendly cooking dish, we have a pyrex one. Microwave until tender, so not too soft, but not rock solid.

Step 2 – Make the cheese sauce, which is a coating white sauce with the cheese added. We added 200g of ticklers mature cheddar, but other cheeses will be fine. Reserve a bit of your cheese and grate. Then pour the cheese sauce over the cauliflower and sprinkle the grated cheese across the top.


Step 3 – Then place in the oven for thirty to forty minutes on 200 degrees ( gas mark 6 ), but check every twenty-five minutes onwards until you feel it is cooked. Which should look like the first photo in this post.

    Glad you like the recipe. 🙂 I’ve always loved cauliflower cheese, but most people don’t add strong mature cheddar, instead opt for weaker cheese, especially restaurants, which is a shame. A good cheddar can cost more, but give this dish the personality it requires.

    As you say, Yum! Sums up the dish.
