How to make homemade flapjacks

Flapjacks are delicious naughty treats that I enjoy with a mug of tea. I remember in days past buying them at train stations or a lunchtime treat at a bakery.

My favourite type of flapjack though has to be homemade. In my humble opinion they do taste superior. Plus you can easily adapt them to personal taste. Feel like a dried fruit version one day? Another week perhaps a cherry version? No problem. Not only is the taste superior, but the price is outstanding!

My girlfriend makes wonderful flapjacks and here is how she makes them.

Ingredients

  • Butter
  • Brown Sugar
  • Golden Syrup (good on toast also)
  • Porridge Oats
  • Optional extras like dried fruit, chocolate chips, cherries etc.

How to make

Step1 – Melt 6 tablespoons of butter in a large saucepan, then add 4 tablespoons of brown sugar and 4 tablespoons of syrup. Stir until melted and then remove from the heat.

Step 2 – Add a generous helping of porridge oats until all the liquid is absorbed. The mixture will become quite tough to stir.

If your going to add an optional extra, do halfway through adding the oats.

Step 3 – Put the mixture on a greased oven tray and spread until flat. Carefully using a sharp knife divide the mixture into thick slices.

Step 4 – Bake in the oven at gas mark 4 (180 degrees Celsius ) for around 30 minutes. When ready the flapjacks will be soft, but also golden brown on top.

Step 5 – Lay out on a wire rack to cool.
